Unfortunately I don't tele, but would love to learn someday!

I'm looking into at least putting together an AT setup this next season. Any suggestions as far as skis and bindings??

Without knowing exactly what you want to pursue whether it's longer backcountry tours or shorter excursions with some possibility of skiing on area inter-mixed it's hard to say exactly. Especially on the bindings. But...
Some popular female models that got great reviews and were sell-outs were:

BD Joule
Atomic Kalais
Karhu - Jill

The BD and Karhu are wider waisted skis, the kalais I think is around 88ish. All three are nice and light and the Joule in particular has enough stiffness to carry through to on-area ice and crud yet is still somewhat forgiving. The Karhu is a little less apt for ice and crud than the Joule, but still a great ski. The Kalais falls somewhere between the two.
